3 Recipes Perfect For Hosting Game Day January 29, 2020

Some of us love food, some of us love sports…and then there are those of us who love both! Now, with the big game just around the corner, we bet you’re thinking about which delicious dishes you’re going to serve. Well, it’s a good thing we made it easy for you. Check out these three Miami twists on classic game day foods… ‘cause to us, the only thing more important than the big game itself is the snacks, of course. 

We collaborated with our very own chef, Melissa Knific, to create the following three recipes, perfect for the big game!

1. Mojo-Marinated Wings

Fun Fact: It is said that a whopping 1.4 billion chicken wings will be consumed this Super Bowl weekend, according to a report by the National Chicken Council. Yup, 1.4 billion with a B.

Ingredients:

  • 3 lbs Chicken Drumettes and Wings
  • 2 Large Oranges
  • 2 Limes
  • 1 Yellow Onion
  • 2 Garlic Cloves, minced
  • ½ Cup Cilantro, chopped
  • 2 tsp Oregano, chopped
  • 2 tsp Salt
  • ½ tsp Black Pepper
  • 2 TBSP Vegetable Oil
  • 2 TBSP Butter, melted

 

Instructions:

  1. In a large bowl, whisk juice of 2 large oranges, juice and zest of 2 limes, small quartered yellow onion, 2 minced garlic cloves, ½ cup chopped cilantro, 2 tsp chopped oregano, 2 tsp salt, and ½ tsp black pepper.
  2. Add 3 lbs chicken drumettes and wings to the marinade, tossing until coated.
  3. Cover bowl with plastic wrap and marinate at least 3 hours (up to overnight).
  4. Remove wings from marinade.
  5. In another large bowl, combine 2 TBSP vegetable oil and 2 TBSP melted butter; add wings to the bowl, and toss until coated.
  6. Arrange wings on foil-lined baking sheet. Bake at 400 degrees for 45 minutes, until crispy and cooked through.
  7. Garnish with more chopped cilantro and serve lime and orange wedges alongside.

2. Sheet Pan Cubano Nachos

Loaded nachos are guaranteed to be a crowd-pleaser this weekend.

Ingredients:

  • 1 Bag of Tortilla Chips
  • 2 Cups Pre-cooked Shredded Pulled Pork
  • 2 Cups Deli Ham, diced
  • 2 Cups Shredded Swiss Cheese

 

Instructions:

  1. Arrange a bag of tortilla chips on a baking sheet.
  2. On top, scatter 2 cups pre-cooked shredded pulled pork, 2 cups diced deli ham, and 2 cups shredded swiss cheese.
  3. Bake at 400 degrees for 8-10 minutes, until cheese is melted.
  4. Top with thinly sliced pickles and Dijonnaise.

3. Spicy Crab Guacamole

Hut hut, hike! Time to get chippin’ and dippin’.

Ingredients:

  • 3 Avocados, peeled and pitted
  • 2 Limes
  • 1 Garlic Clove, grated
  • ½ Cup Cilantro, chopped
  • ½ tsp Chili Flakes
  • ½ Cup Lump Crab Meat
  • Salt, to taste

 

Instructions:

  1. In a large bowl, mash 3 peeled and pitted avocados
  2. Mix in juice of 2 limes, 1 grated garlic clove, ½ cup chopped cilantro, and ½ tsp chili flakes. Season with salt
  3. Gently fold in ½ cup lump crab meat.
  4. Serve tortilla chips alongside.
