Everyone’s thinking it, but no one wants to say it: fall is just around the corner. Eventually, we’ll get excited about all the apples and pumpkin spiced everything that’s coming our way. But right now, we’re too busy savoring the sweet summer months in the best way we know how: eating. And the star of our August menu is refreshingly sweet kernels of barbecue perfection, also known as corn on the cob.

Perhaps you’re familiar with the classic grilled corn slathered with butter and sprinkled with flaky sea salt. Don’t get us wrong — these two make a magical pair. But if you’re feeling a little spunky and craving something different, try these five variations on the classic summer side dish.

You’ll never look at corn the same way again.

1. Mexican Style

Slather these bad boys with a bit of mayo (or butter if mayo’s not your thing), chili powder, cotija cheese, cilantro, and a squeeze of tangy lime juice.

Although it tastes fabulous on its own, it’s even better when pineapple margaritas are involved.

2. Indian Style

Get in those healthy fats by smothering your corn with coconut oil, curry, and toasted sesame seeds.

3. Italian Style

Although pasta is the first thing that comes to mind when thinking about Italy, we had a feeling wrapping corn in spaghetti and smothering it with tomato sauce wouldn’t taste too great. (But feel free to try it at your own risk.) As the next best thing, we opted for pesto and Parmesan.
