Deliciously Simple: Biscotti Recipe October 17, 2015

Do we have your attention?  Nothing better than a warm mug and a cookie!  Now bust out your baking pan because there’s not a moment to waste.  The beauty of this recipe is the sweet and savory concoction of pistachios, rosemary, sugar and cheese.  The traditional biscotti has nothing on this upscale twist.  It even has a bit of a more festive, fall feel, with the deep brown color and hazelnut goodness.  How could you turn it down?

Hazelnut & Pistachio Biscotti

Ingredients

  • 3/4 C plain flour
  • 1/3 C white caster/super fine sugar
  • ¼ tsp baking powder
  • 1 medium egg, beaten
  • Few drops of vanilla extract
  • 1 tsp chopped fresh rosemary
  • 1/4 C Parmesan Cheese, grated
  • 1/4 C shelled pistachio nuts
  • 1/2 C whole unblanched hazelnuts

Instructions:

  1. 1. Preheat the oven to 400 degrees and place a sheet of parchment paper on a baking tray
  2. 2. In a bowl, mix together the flour, sugar & baking powder. In the center of the mixture, make a small hole and break the egg into here.
  3. 3. Mix the egg into the mixture with the vanilla, cheese, rosemary and nuts and combine thoroughly with your hands until it forms a soft, modable dough.
  4. 4. Using your hands, shape into an oval loaf. Place on the baking tray for 25 minutes until it becomes golden brown, and then set aside to cool slightly.
  5. 5. Using a bread knife, cut diagonally into thin 1/2 inch pieces. Place back onto the baking tray (with the cut side facing upwards) and return to the oven for another 5 minutes, until crisp and golden. Cool, then serve & enjoy!

Simple, quick, and impossibly good.  Maybe we can get the kids to opt for this over Oreos?  Maybe not…but you never know!  Try it out and let us know what you think.  What is your favorite cookie?
