Happy Cinco de Mayo! Let’s celebrate with some delicious puns, shall we?

Before you go running off to your local supermarket to buy a jar of Hellman’s, just know that mayo is surprisingly easy to make at home. You can certainly buy it in a jar at the store and add the flavors for each of the below creations, but that wouldn’t be very fresh or fun, would it?

Here is a recipe for a base mayo that can get you started on your way to creating fun and exciting concoctions. It’s enough for two cups:

#1: Classic

Ingredients:

  • 2 egg yolks, at room temp
  • 1/2 tsp salt
  • 2 tbsp cold water
  • 1 tsp mustard
  • 2 tbsp lemon juice
  • 1 1/2 cups cold canola or olive oil

Instructions:

  1. Gather all the ingredients except the oil in a bowl and whisk for 20 seconds
  2. While mixing, add the oil slowly, until the sauce thickens and becomes mayo

Could it be easier? Now, gather up some other exciting ingredients and add flavor to your base.

#2: Aioli

Just add 2 crushed garlic cloves and a 1/4 cup of finely chopped herbs to create this fancy bistro mayo. The herb choice is up to you, depending on what you plan to spread this on. Dill would be delicious for a tuna salad sandwich!

#3: Spicy

This one is for all you heat-seekers out there! Either stir in 1 tbsp of your favorite hot sauce or take this homemade fire treat to a new level by finely chopping up some habanero and adding it to your base.

#4: Curry

Add in 1/2 tsp of curry powder and 1/2 tsp of fresh cumin and transport your senses.

#5: Miso

Just add 3 tbsp of white miso paste, 1 tsp sugar and 2 tbsp of white rice vinegar for an Asian flavor in every bite.

Now, isn’t 5 mayo recipes better than May 5th?
