This looks really interesting. I want to try it. I’ve never seen what you do with the orange before. What is left after pressing through the strainer? Does the skin and pith go through?

Hi Sue – no, not exactly. You’ll get all the juice, plus pulp and a bit of pith to bulk things up (but if some skin sneaks in there, it’s not the end of the world). If you want to save time, feel free to skip the boiling and just juice the orange.

Hi lyn! Not sure – we’ve never baked with Truvia before. However, if you’re looking for a substitute for sugar, we would recommend honey or pure maple syrup.

Is almond meal and almond flour the same thing?

Jacqueline says:

Good question, Renee! They’re similar, but not exactly the same. Almond flour is made with blanched almonds (so no flecks of skin) and is very fine. However, almond meal is a bit coarser. We haven’t tried this recipe with almond flour, but if you do please let us know how it tastes!!

You can definitely find almond meal at health food stores like Whole Foods, but also at most other grocery stores (it’s getting increasingly popular). It’s even at Target and Walmart!

This looks delicious! Can you sub one cup of honey or maple syrup for the one cup of sugar? Do the ratios of other ingredients change if you add a liquid sweetner rather than a granular? Thanks for your help! Trudy

Trudy – because honey is sweeter than sugar, we recommend using only 3/4 cup. Also, add another 1/2 teaspoon baking powder and reduce the oven temperature to 350 rather than 375. Let us know how it turns out!!

I made this just now. I used almond flour since I had it on hand and I also used Pyure which is a Stevia blend. The flavor was nice but I would recommend a LARGE orange. If you have doubts that your orange is large enough, it probably isn’t. Also, my oven apparently cooks fast because I was so sad that mine was very dry. Next time I will check it at 35 minutes and spot check from there. I am willing to give it another try!

Thank you for your feedback, Renee! Definitely give it another try and check after 35 minutes. You can insert a toothpick or a knife, and if it comes out clean, you’re good to go.

Hello, love all these ideas but especially the chips! I am not a fan of beets since childhood (my Mother served them pickled, ick!) but am willing to try again. So for the chips, are they raw when you put them on the cookie sheet? Or do you boil/roast them first as you described? Please advise, I’m buying some beets today!! Thanks!
