We don’t think early mornings should make getting out of bed a drag! Get your days started on a bright note this winter with our quick and wholesome citrus salad…

We all know the feeling of waking up in the morning with no desire to do anything but lay in bed, snuggle up with our warm blankets, and watch our favorite TV shows all day. But unfortunately, this dream usually gets crushed by not-so-beautiful responsibilities that require us to actually get out of bed and be productive. Yikes! But don’t you worry. We’ve figured out the perfect way to snap you out of your winter blues and have you springing out of bed…a refreshing citrus salad. Yes, a salad for breakfast. Just go with it.

Before we get to the recipe, let’s take a second to appreciate how citrus fruits are not just delicious and refreshing, but also incredibly nutritious!

1. They decrease your risk of cancer and cardiovascular disease. 

Flavonoids, a group of substances highly prevalent  in the membranes and white pith of citrus fruits, are antioxidants that reduce inflammation and may prevent cancer by helping your body fight off carcinogens and kill cancer cells. The high dose of Vitamin C in these fruits also helps prevent inflammation that can lead to cardiovascular disease and other chronic illnesses.

2. They provide a healthy dose of fiber

About 65 percent of the fiber in citrus fruits is soluble fiber, which helps lower LDL cholesterol (the bad kind) and therefore reduce the risk of heart disease. It also helps prevent spikes in blood sugar. The remainder of the fiber in these delicious fruits, known as insoluble fiber, works wonders for your gut.

Citrus Breakfast Salad

Ingredients

  • If tart grapefruits aren’t on your list of favorite citrus fruits, try using blood oranges instead!

    Ingredients

    • 1/4 Cup Pistachios
    • 1 Orange
    • 1 Grapefruit
    • 1 Cup Greek Yogurt
    • 1 Tablespoon Honey
    • 1/4 Cup Rolled Oats

Instructions:

  1. Roughly chop pistachios.
  2. Use a sharp knife to cut the skin off the orange and grapefruit.
  3. Cut citrus into thin slices, place in a bowl, and mix with honey.
  4. Plate Greek yogurt and place citrus slices on top.
  5. Drizzle over remaining honey and sprinkle with oats and pistachios.
  6. Enjoy!
