Grilled Greek Flatbread Pizza Recipe July 30, 2018

Part-pizza, part-flatbread, all-delicious.

We combined the classic, down-to-earth charm of pizza with the fancy-pants elegance of flatbread. And then we topped it with feta, olives, arugula, and other Greek(ish) foods. Oh — and we grilled it, too. Because it’s summer, and we love some good grill marks (and the subtly smoky, charred flavors that come with ’em).

If you’re short on time, feel free to skip the homemade dough and opt for store-bought flatbread instead (we won’t tell). Brush with oil and toss on the grill for a minute or two per side to warm before adding the sauce and toppings.

Ingredients:

  • For the flatbread:
  • 1 1/3 Cups All-Purpose Flour
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Dry Active Yeast
  • 1/2 Cup Lukewarm Water
  • 1 Tablespoon Olive Oil (+more for brushing)
  • For the sauce:
  • 2 Tablespoons Olive Oil
  • 2 Cloves Garlic, minced
  • 1 1/2 Cups Diced Tomatoes
  • 2 Tablespoons Chopped Parsley
  • Pinch Chili Flakes, to taste
  • Toppings:
  • Feta Cheese, Olives, Dried or Fresh Tomatoes, Sliced Avocado, Ham, Arugula, Red Onion

Instructions:

  1. Make the dough: Add flour and salt to a large bowl. In a separate bowl, dissolve yeast in water. Let sit until foamy, about 5 minutes. Add to flour/salt mixture and stir. Once well combined, add olive oil. Knead dough with your hands on a well-floured surface, adding more flour as necessary to prevent it from sticking, until smooth and elastic, 3-5 minutes. Place into a lightly oiled bowl and cover with a clean kitchen towel. Let sit about 45 minutes.
  2. Make the sauce: Meanwhile, heat oil in a pan. Once shimmering, add garlic and tomatoes. Cook 15-20 minutes, adding parsley during the last 5 minutes. Season to taste with salt, pepper, and chili flakes.
  3.  Grill the dough: Place dough on a lightly floured surface. Divide into 4 equal pieces and roll each into 1/8-inch thick rounds. Lightly brush both sides with olive oil, then place directly on the hot, oiled grill. Grill until golden brown and grill marks appear, 2-3 minutes per side.
  4. Assemble the flatbread pizza: Remove dough from grill (or move to an area of indirect heat). Spoon over sauce, then add toppings as desired.
