But tangy, herb-studded chimichurri is certainly a close second, as it’s almost always found drizzled on top of every cut of steak (or used as a marinade). So it seemed fitting, then, that our last deliciously diverse Global Eats recipe honored this dynamic duo — which we have a feeling you’ll love just as much as we do.

How to make chimichurri sauce

This drizzly, bright green sauce comes together with 4 simple “components.” And because it’s uncooked, it’s as easy as mincing, whisking, and seasoning. Although steak is the traditional protein of choice, it also pairs beautifully with chicken and smoky grilled fish.

Component #1: Herbs

Herbs are the backbone of any chimichurri — you can’t have it without ’em. And although most recipes call for parsley, our chefs flexed their creative culinary muscles by opting to use cilantro for a depth of flavor that carries with it hints of pepper, sage, and lemon. There’s no right or wrong though! So feel free to use whatever herbs you have on hand, and don’t be afraid to use more than one type.

Component #2: Aromatics

Oregano and cumin are the two most common spices found in chimichurri — oregano, for its slightly bitter, minty flavor and cumin for its warm, earthy taste.

Component #3: A kick of heat

Some chimichurri recipes call for crushed red pepper for that kick of heat. But we’re on team jalapeño since it can easily align with your spice preferences. Removing the ribs and seeds tones down the spice, ensuring all the flavor that you love is still present without the “OMG my mouth is on fire” that you don’t. And for the brave, feel free to go all-in.

Component #4: Liquids

Incorporating at least one liquid to tie everything together is a must. Plain old olive oil works like a charm, but our chefs also added a squeeze of lime for extra tang.
