It’s only week 2 of Taste of Italy month, and we’ve tasted so many delicious recipes from this country that is so rich in food culture and tradition. Speaking of food tradition, if you look at the classic Italian menu, most of the dishes are very simple and easy to make, using only a couple of ingredients, of the best quality and freshness.  Maybe this is why we love Italian recipes so much here at HelloFresh 🙂 Because the landscape is so rich in vegetation, Italians, no matter what social class or religion, have always eaten very well. Thus, this week, we’re introducing you to an Italian favorite, Ribollita!

Despite its delicious-sounding name, Ribollita is translated as “re-boiled,” alluding to its peasant origins. In the Middle Ages, this dish was made with leftover veggies and bread that the servants gathered after banquets that were held by their feudal lords. The dish has obviously been added to over the years to make it more filling and nutritious – in this recipe we’ve added creamy beans, and savory parmesan croutons.
