Next week we’re celebrating St. Patrick’s Day with everything GREEN- and you already know that’s our favorite color! What better way to celebrate St. Patrick’s Day than by cooking up some green grub?

Our gorgeously green twists to traditional dishes will add an extra boost of both flavor and nutrients. “There are so many ways to sneak in green veggies to add extra flavor and fiber to recipes at home,” said Rebecca Lewis, in-house RD for HelloFresh. This Lemony Pan-Seared Chicken with Pesto Potato Salad and Peas uses delicious pesto and bright green sweet peas to add a festive Irish touch to chicken dinner.

These delicious Fiery Pork Fajitas with Blistered Peppers and Guacamole use spinach tortillas instead of regular flour to add even more green to the dish!

Looking for more ways to celebrate St. Patrick’s Day with healthy green eats? Rebecca says,

  • Add in grated zucchini to your meatballs, hamburger patties, or spaghetti sauce.  You can even add it to your breads, muffins, and cookies
  • Pesto doesn’t always have to be basil-based!  Add kale, spinach, or herbs like cilantro or parsley for a different yet equally delicious flavor
  • Lime zest is an amazing way to add a zing of flavor to eggs, vinaigrettes, or beans
  • If you’re watching your carbs, Swiss chard, kale, cabbage all make great wraps as a replacement for tortillas and burger buns

Green never tasted so GOOD! Don’t forget to make meal choice before midnight tomorrow to pick your special menu!
