Stuffed Sweet Potatoes TWO Ways For Game Day January 23, 2020

Move over chips and dip, there’s a new appetizer in town. We’re talking stuffed sweet potatoes loaded with two classic dips: guacamole and buffalo chicken.

Crispy sweet potato skins? Check. Creamy guacamole? Check. These guacamole-stuffed sweet potatoes might just be your new Game Day tradition.

Ingredients

  • 4 Medium Sweet Potatoes
  • 2 Scallions
  • Guacamole (2-3 avocados, lime juice, garlic, red onions)
  • ½ Cup Grape Tomatoes
  • ½ Cup of Sour Cream
  • ½ Teaspoon of Salt
  • ½ Teaspoon of Pepper

Instructions

  1. Preheat oven to 400 degrees Fahrenheit
  2. Poke sweet potatoes with a fork and place on a lightly oiled baking sheet
  3. Bake sweet potatoes for 35-40 minutes
  4. Slice avocados in half and remove the pit
  5. Scoop out the flesh and place in a medium-size bowl
  6. Add 1 tsp of minced garlic, 1 tsp of red onions, 1 tsp of cilantro, and the juice from half a lime to the bowl
  7. Mash with a fork
  8. Quarter grape tomatoes
  9. Chop scallions keeping whites and greens separate
  10. In a small bowl, mix sour cream with 1 teaspoon of scallion whites
  11. Remove Sweet Potatoes from the oven
  12. Scoop out the middle of the sweet potatoes
  13. Sprinkle salt and pepper over sweet potatoes
  14. Fill with 1 tablespoon of guacamole
  15. Top with tomatoes, scallion greens, and cilantro
  16. Fill a plastic sandwich bag with 1 cup of sour cream.
  17. Cut the tip off of one of the bottom corners of the bag
  18. Squeeze sour cream through the corner hole to make lines of sour cream
  19. Make one line of sour cream lengthwise across the potato, then a few small lines across that line to make a football stitch pattern.

    • 4 Strips of Bacon
    • 2 Scallions
    • 2 Tablespoons of Hot Sauce
    • Ranch Dressing
    • ½ Teaspoon of Salt
    • ½ Teaspoon of Pepper

Instructions

  1. Preheat oven to 400 degrees Fahrenheit
  2. Poke sweet potatoes with a fork and place on a lightly oiled baking sheet
  3. Bake sweet potatoes for 35-40 minutes
  4. Add bacon slices to a skillet over medium-high heat
  5. ‘Cook until crispy (5-8 minutes)
  6. Place on a plate with a paper towel to cool and absorb excess fat
  7. Once cooled, roughly chop
  8. Add chicken to the pan with bacon grease and cook on medium-high heat for 4-5 minutes per side
  9. Chop chicken into ½” cubes
  10. In a medium bowl, mix chicken and bacon bits with hot sauce
  11. Remove potatoes from the oven
  12. Scoop out the flesh
  13. Sprinkle salt and pepper over potatoes
  14. Fill with diced chicken and bacon bits
  15. Sprinkle minced scallions over potato skins
  16. With the ranch dressing, drizzle a pattern similar to the stitching of a football over the potato skins.
