Long, warm days call for ice cold drinks, frozen treats, and festive meals that don’t require excessive planning or prep. In just 40 minutes, you’ll be making sticky BBQ baby back ribs, gooey jalapeño cheddar biscuit bombs, and a bright chili lime corn salad for either 2 or 4 people. Psst—double up if you really want to make it a party! Everything’s as finger-lickingly good (and far less complicated to make) than it sounds: The oven does most of the work here! Start by getting the main event going—sprinkle the ribs with a bit of smoky ancho chili powder, nestle ’em into a foil packet, and pop into the oven (or onto the grill) to reach fall-off-the-bone perfection. That’s right, we’re talkin’ totally hands-off.
Meanwhile, you’ll be stuffing buttermilk biscuit dough with a mouthwatering mix of melted butter, cream cheese, cheddar cheese, and minced jalapeño. Roll into balls, then top with even more butter, cheddar, and minced jalapeño (because sometimes more is more). Once baked, the cheesy stuffing turns molten while the outside bakes up golden and fluffy.
Finally, char the corn until deliciously toasty, then mix with tomatoes, scallions, and cilantro, plus herby ranch dressing and a few big squeezes of fresh lime juice. If you have a few extra minutes, cool it down in the fridge.
Serve everything buffet-style along with some cold brews, seltzers, or sodas (or all of the above), and dig in with reckless abandon.
