3 Ways To Celebrate Family Fun Month August 5, 2019

Jam Out
August is the perfect time to take some fruit at its absolute freshest and try something new. These jams can be made in small batches and require only a few ingredients, meaning you can make as many as you’d like throughout the summer. Use it to spice up your grilled cheese, swirl into your favorite yogurt, or simply spread on toast with butter!
Peach Basil Jam:
Ingredients:

1 Pound Fresh Ripe Peaches (Pitted And Peeled)

Sprig Of Basil
-
1 Cup Sugar
-
2 TBSP Lemon Juice + 1 tsp
-
Salt
Instructions:

Wash and dry basil. Remove basil from stems, finely chop leaves until you have 1 TBSP.

Juice lemon.

In a medium pot, combine prepared peaches, sugar, 2 TBSP lemon juice,and 2 TBSP water. Bring to boil over medium heat, stirring often so the sugar doesn’t burn. Let boil until peaches break down and become thick, about 30 minutes. Mash large chunks of fruit using a wooden spoon.
Tip: You’ll know the jam is done when you dip your spoon and jam coats the back of it.

Once the jam is ready, remove from heat. Stir in basil, pinch of salt, and 1 tsp lemon juice. Carefully transfer to a clean glass jar and let cool to room temp. Store in fridge and refrigerate up to 2 weeks.
Raspberry Chipotle Jam:
Ingredients:

1 Pound Fresh Ripe Raspberries

2 TBSP Lemon Juice + 1 TSP

½ Cup Sugar

¼ Tsp Of Salt
-
½ Tsp Of Chipotle Powder
Instructions:
- Wash raspberries. Juice lemon.

In a medium pot, combine berries, sugar, and 2 TBSP lemon juice. Bring to a boil over medium heat, stirring often so the sugar doesn’t burn. Let boil until berries break down and become thick, about 25 minutes. Mash larger chunks of fruit using wooden spoon.

No-Cook Cheesecake
Making a no-cook dessert is not only a great way to beat the heat, but it’s also a good way to get the little ones involved in making something yummy!
Ingredients:
- For the crust:
- 1 Cup Almonds
- 1/2 Cup Pitted Medjool Dates
- 1 Cup Walnuts
- 1/4 Teaspoon Vanilla Extract
- Dash Cinnamon
- Dash Salt
- For the filling:
- 2 8-Ounce Packages Room Temperature Cream Cheese
- 1/2 Cup Granulated Sugar
- 1 1/2 Cups Cold Heavy Cream
- 2 Tablespoons Lemon Juice
- Assorted Fruit
Instructions:
- Make crust by first pulsing almonds and dates together in a food processor until well chopped. Add walnuts, vanilla extract, cinnamon, and salt and blend until well combined with only small chunks visible.
- Add mixture to a lightly oiled pie plate and press down gently until even. Refrigerate at least 20 minutes, preferably close to one hour.
- Meanwhile, use an electric mixer to beat cream cheese and sugar in a large bowl until smooth, 2-3 minutes.
- Reduce speed to low and slowly add heavy cream. Once all added, increase speed to medium and beat until peaks form, about 3 minutes.
- Stir in lemon juice before spreading evenly into crust.
- Loosely cover and refrigerate until filling sets completely, 4-6 hours.
- Top with fruit just before serving.
