But to make your time in the kitchen a tad bit simpler and a whole lot more fun, we’ve rounded up five of our favorite easy butternut squash recipes — from set it and forget it slow cooker soup to melty quinoa bakes, mashes, and even tacos. Yes, tacos.

1. Slow Cooker Butternut Squash Soup

Throw all ingredients into the slow cooker, conquer the other zillion tasks on your to-do list, and still be left with a knock-your-socks-off soup. That’s what this recipe is all about.

Ingredients:

  • 2 1/4 Pounds Butternut Squash, chopped into small chunks
  • 1 Large Yellow Onion, diced
  • 2 Granny Smith Apples, diced
  • 2 Carrots, cut into chunks
  • 1 Tablespoon Salt
  • 1 Teaspoon Black Pepper
  • 2 Bay Leaves
  • 1 Tablespoon Curry Powder
  • 1 Teaspoon Turmeric
  • 1/4 Teaspoon Cinnamon
  • 1 Teaspoon Ginger
  • 1 Tablespoon Minced Garlic
  • 2 Cups Vegetable or Chicken Broth
  • 1/2 Cup Heavy Cream
  • Parsley (for garnish)

Instructions:

  1. Spray a 7- or 8-quart slow cooker with nonstick cooking spray.
  2. Add all ingredients except heavy cream into slow cooker.
  3. Cook on low heat setting 7-8 hours or high heat setting 4-5 hours.
  4. Add to a blender and blend until smooth.
  5. Stir in heavy cream and adjust seasonings to taste.
  6. Garnish with extra heavy cream and herbs.

2. Melty Gruyère-Topped Quinoa with Butternut Squash and Sprouts
