1. Baja Lobster-Avocado Roll

“For a Mexican twist on a lobster roll, toss with creamy, diced avocado for extra richness. Finish with crunchy, sliced radishes, plus hot sauce to give it a kick.”

Ingredients

  • 1 1/2 lbs Cooked Lobster Meat
  • 4 New England Style Hot Dog Buns (Split-Top)
  • 2 Avocados
  • 1 Lime
  • 2 Tablespoons Sour Cream
  • 2 Tablespoons Mayonnaise
  • 1/4 Cup Chopped Cilantro
  • 4 Tablespoons Melted Butter
  • Radishes (to garnish)
  • Hot Sauce (to garnish)
  • Salt (to season)
  • Pepper (to season)

Instructions

  1. Roughly chop the Cooked Lobster Meat.
  2. Halve, pit, peel, and dice 2 avocados.
  3. In a large bowl, whisk mayonnaise, cilantro, and the juice and zest of the lime.
  4. Gently fold in lobster and avocado until coated.
  5. Season with salt and pepper.
  6. Brush the outside of 4 split-top hot dog buns with melted butter; toast until golden-brown.
  7. Fill the buns with lobster-avocado mixture.
  8. Garnish rolls with thinly sliced radishes, hot sauce, and any additional cilantro.

2. Farmer’s Market Lobster Roll

  • 1 1/2 lbs Lobster Meat
  • 4 Hot Dog Buns (Split-Top)
  • 2 Tablespoons Mixed Freshly Chopped Herbs (Chive, Parsley, and Tarragon)
  • 1/4 Cup Mayonnaise
  • 4 Tablespoons Melted Butter
  • 1/2 Lemon
  • Hot Sauce (to garnish)
  • Salt (to season)

Instructions

  1. Roughly chop the Lobster Meat. (TIP: Feeling adventurous? Steam your own lobster or buy fully cooked lobster meat at your local fish market or supermarket.)
  2. In a large bowl, whisk mayonnaise, melted butter, mixed roughly chopped fresh herbs and the juice of half a lemon. (TIP: use your favorite fresh/tender herbs!)
  3. Add the lobster meat and toss to coat.
  4. Season with salt and a dash or two of hot sauce.
  5. Heat a grill pan over medium heat.
  6. Brush the outside of the hot dog buns with melted butter.
  7. Toast the buns until slightly golden, about 1 minute per side.
  8. Fill the buns with tender baby lettuce leaves.
  9. Divide the lobster salad among the buns.
  10. Sprinkle with the roughly chopped celery leaves or celery salt.

3. Hot Buttered Lobster Roll

Ingredients

  • 1 1/2 lbs Lobster Meat
  • 4 Hot Dog Buns (Split-Top)
  • 8 Tablespoons Butter (1 Stick)
  • 1 Lemon
  • ½ Teaspoon Paprika
  • Salt (to taste)
  • Pepper (to taste)
  • Parsley (to garnish)
  • Chives (to garnish)

Instructions

  1. Roughly chop lobster meat into 1-inch pieces
  2. Melt butter in a large pan over medium heat. Once melted, remove from heat and stir in lobster meat.
  3. Toss with the juice of 1/2 lemon, ½ tsp paprika, and a large pinch of salt and pepper.
  4. Divide buttered lobster among hot dog buns.
  5. Serve with lemon wedges to squeeze over.
  6. To dress it up, garnish with chopped parsley or chives.
