The Best Guacamole I’ve Ever Had (+3 spins on the classic) May 9, 2019

by Eat

Get your tortilla chips ready, friends. You’re gonna want a LOT of ’em.

I’ve eaten a whole lot of guac in my day, but nothing compares to this classic, fool-proof, creamy, tangy, and hot but not too hot recipe. It’s been a staple in my appetizer rotation ever since the day I tasted it, and have a feeling you’re going to love it just as much as I do.

Although clearly partial to this tried-and-true recipe, I’ve also included three creative spins on the beloved dip — one with fragrant basil and juicy roasted tomatoes, another with bacon (yes, bacon), and a third with creamy, gut-lovin’ Greek yogurt. Do your taste buds a favor and try ’em all this season. Whether it’s for a festive get-together, football tailgate, or a cozy night in, you’ll be glad you did.

1. Classic Guac

So simple, so fun to make, and SO delicious.

  • 3 Ripe Hass Avocados
  • Juice From 1-2 Limes
  • 1-2 Green Chile Peppers, finely chopped
  • 1/2 Finely Chopped Red Onion
  • Handful Cilantro, chopped
  • Salt and Pepper

  1. Halve and pit avocados, then scoop out flesh into a bowl. Roughly mash with a fork or potato masher, adding half the lime juice as you go.
  2. Add remainder of lime juice, chile peppers, red onion, and cilantro.
  3. Stir well and season to taste with salt and pepper.

2. Basil Guac

Mexican dip + Italian flair = cross-cultural dream-come-true.

  • 2 Cups Cherry Tomatoes, halved
  • 1 Teaspoon Olive Oil
  • Salt and Pepper
  • 4 Ripe Hass Avocados
  • 1/4 Cup Finely Chopped Red Onion
  • 1 Garlic Clove, minced
  • Juice From 1 Lemon
  • 1/2 Cup Finely Chopped Basil

  1. Preheat oven to 400ºF.
  2. Toss halved tomatoes with olive oil and a pinch of salt and pepper.
  3. Place tomatoes in a single layer on a lined baking sheet. Roast until soft, 12-15 minutes.
  4. Remove and set aside to let cool.
  5. Meanwhile, halve and pit avocados, then scoop out flesh into a bowl. Add red onion, garlic, and lemon juice.
  6. Use a fork or potato masher to gently mash ingredients together.
  7. Add basil and 3/4 of the roasted tomatoes. Gently fold together.
  8. Season to taste with salt and pepper, and top with remaining roasted tomatoes before serving.

3. Bacon Guac

You can’t buy happiness, but you can buy bacon. And let’s be honest, it’s practically the same thing.

  • 4 Ripe Hass Avocados
  • Juice From 1 Lime
  • 1 Garlic Clove, minced
  • Salt and Pepper
  • 1/4 Teaspoon Crushed Red Pepper
  • 1/4 Cup Crumbled Feta Cheese
  • 6 Slices Cooked Bacon, crumbled
  • 3 Scallions, sliced
  • 1/2 Roma Tomato, diced

  1. Halve and pit avocados, then scoop out flesh into a bowl and mash with a fork or potato masher.
  2. Add lime juice and garlic. Season to taste with salt, pepper, and crushed red pepper.
  3. Stir in feta cheese, bacon crumbles, scallions, and tomatoes.

4. Creamy Guac

  • 1/4 Cup Greek Yogurt
  • 1/4 Cup Diced Red Onion
  • 1 Tablespoon Chopped Cilantro
  • 1/4 Cup Diced Tomatoes
  • 1/2 Teaspoon Minced Jalapeño
  • 1 Teaspoon Lime Juice
  • Salt and Pepper

  1. Halve and pit avocados, then scoop out flesh into a bowl and mash with a fork or potato masher.
  2. Add remaining ingredients, and season to taste with salt and pepper.

And if you’re gearing up for the Superbowl, fill an oval bowl with half classic guac and half turmeric hummus. Detail the “football” with a touch of sour cream, and you’ve got a snacktime touchdown.

Another idea is to swap out egg yolks for guac in your deviled eggs. Layer on some chives, and sit back as the whole team gobbles ’em down.

All these look amazing. I have never tried it. I Love guacamole. And I picked a few things that I thought we might like. Does everything come with the meal? Or do you have to purchase some of it?

Jordan Schultz says:

Hi Gussie– Everything will be delivered with the box! All you need to provide are the pantry items (salt, pepper, butter, and oiL).

We had several hard boiled eggs left over from Easter 2019. I will replace the egg yolk with the suggested guacamole and serve them at dinner tonight. Thank you.

I grew up in the south. If you add anything to basic guacamole it becomes “guac salad” or “guac salsa”. Just wanted to let you know

Lynn says:

I used to use onions in guac … until I came across the Trader Joe’s guac kit (no longer available), which uses shallots instead. All the flavor but subtler and with a bit less bite. Also, better sized for smaller amounts of guac! I think this would be a good change for HF to make to its kits. Also, coarsely chopping the avocados, rather than mashing them, works well, too, especially if they’re riper (when they will naturally have some softer, creamier parts).

Another twist on the original: My best friend often adds finely chopped turkey pastrami. Sounds a bit weird but it’s wonderful!

While I have enjoyed Hello Fresh immensely, I am needing to cancel my account due to various reasons, one being health related. I will not go into detail but this will create complications with my schedule and life. Thus, I must cancel.
