Happy New Year HelloFreshers! I hope you’re all having an enjoyable start to 2013 so far. I’m excited to share today’s post because this week’s delivery includes my all-time favorite Korean dish – Vegetable Bibimbap.

Since I am of Korean heritage, I am particularly proud to tell you more about this dish. Some of you may have never heard of bibimbap and are probably wondering what it consists of. For starters, the word ‘bibimbap’ literally translates to mixed rice. It is served as a bowl of warm rice topped with sautéed and seasoned vegetables and mixed with chili pepper paste.

HelloFresh’s Vegetable Bibimbap boasts a variety of delectable and healthy ingredients, specifically baby spinach, carrots and shiitake mushrooms. When compared to normal spinach, baby spinach tends to be smaller, sweeter and more tender. Baby spinach is a rich source of vitamin K, an essential nutrient that contributes to bone health, and vitamin A, which is vital for eye health. Be sure to cook spinach for under three minutes, though, to preserve its nutrients!

Naturally sweet, delicious and crunchy, carrots are also a great source of vitamin A. Studies have shown that carrots help protect from skin, lung and oral cavity cancers so be sure to have your daily fix of them in your favorite dishes or as an on-the-go snack.

mushrooms

Known for their health-promoting properties such as protection against cardiovascular diseases and high iron levels, shiitake mushrooms have been used medicinally by the Chinese. Their rich, smoky flavor and fun texture is a great addition to many dishes.
