There are only three key steps when it comes to making stuffed peppers. And you can do them exactly the way that tastes most deliciously to you. Sound like a simple dinnertime win? We think so, too.

1. Halve (5 minutes)

First things first: pick your pepper.

Bell peppers are known for their fruity sweetness, with green being the least sweet and red being the sweetest. For our stuffed peppers recipe next week, we’re sending you poblano peppers. They’re mild and have a slightly smoky flavor, which makes cooking with them extra tasty. You’ll find them in a lot of Mexican cuisine because they’re grown in the region, but their hollow insides make both bell and poblano peppers great for stuffed dishes. You can’t go wrong!

All it takes is a sharp knife and a cutting board to simply halve the pepper lengthwise as many times as you’d like, removing stems and seeds.   

2. Roast (15 minutes)

Once you’ve got your seeded peppers, place them skin-side down on a baking sheet. You’ll want to roast them in the oven until they’re blistered and softened, about 15 minutes at 450 degrees. Then, just set them aside to cool while you whip up your filling.

3. Fill (2-3 minutes)

Here comes the fun part — mixing all your favorite flavors and filling the peppers. In our version, we opt for turkey, oregano, a custom HelloFresh Southwest spice blend, tomato, onion, rice, corn, and cheddar cheese.

Fill your peppers with the delicious mixture and pop that baking sheet back in the oven to broil for just 2-3 minutes. Voila!

You could make this recipe without stuffing the poblanos and it would still be delicious—the filling is a splendid meal in its own right. But would it be just as fun? Probably not. Something about having all that goodness inside a warm pepper package makes it even more delicious.
