794. San Marzano Tomatoes

I love a proper meal salad. Salad can be kind of dull, but when you start adding different foods and textures, and you think about how some of the ingredients can be prepared in different ways, they can turn out as a really great meal. San Marzano tomatoes are an Italian variety of plum tomato and they are lovely and sweet, so I thought they’d make a perfect addition to this barbecue chicken salad.

I started out by making some barbecue chicken by roasting chicken breast with barbecue seasonings, letting it cool, and shredding it. I then made some grilled tomatoes and corn. I chopped baby plum tomatoes in half and scattered them on a baking tray with sweetcorn, lots of black pepper and a drizzled of olive oil. I placed them under a hot grill for 10 minutes, turning them every few minutes so they got cooked nice and evenly.

On the plate I started with some nice curly-leaved lettuce and cucumbers, then layered on the chicken, corn, and tomatoes. I drizzled it with a little poppyseed dressing, then scattered some chopped almonds over the top for crunch. Yum!
