4 Seasonal Summer Veggies We LOVE July 13, 2016
We’ve all heard them – vegetable haters are everywhere. But here at HelloFresh, we’re convinced that people who don’t love veggies just haven’t tried the sensationally ripe, seasonal summer varieties in our boxes.
Just like Jamie, we know you can’t go wrong with delicious seasonal produce at dinner. That’s why we’re inspiring you to whip up your best summer veggies, snap a photo, and upload it to HelloFresh’s Facebook page with the dish’s name and the hashtag #HelloFreshChallenge. The photo with the most likes will win. The prize? A signed copy of Jamie’s Everyday Super Food (T&Cs apply).

1. Beetroot
Did you know that beets contain tryptophan, which is the same feel-good chemical that everyone raves about in chocolate and protein-packed foods? Really ripe beetroot has a lovely sweetness to it, and although a lot of people are used to eating it pickled, the fresh stuff straight from the ground is even higher in folic acid, potassium, and manganese. Remove the skin, slice off the ends, chop into cubes, and boil under tender. Add it to salads or even roast it with some vegetable oil for a sweeter flavor.

2. Peas
You’ll probably be completely blown away by the fact that one portion of peas contains the same amount of vitamin C as two apples (we’re totally serious… Google it)! These sweet little gems are full of fiber, too. Throw ’em into curries, salads, pastas, and even risottos for a welcome pop of color.

3. Arugula
Arugula is a leafy green with a peppery bite – perfect in salads and on pizza. Fun fact: it grows at a super speedy pace and contains potassium, which helps us to maintain a normal blood pressure.

4. Radishes
The humble radish is loaded with vitamin C and folic acid, which means it works wonders when it comes to reducing feelings of fatigue. Most people know radishes raw, but have you ever tried roasting them with butter, sea salt, and black pepper? It’s a total game changer.
