4 Seasonal Summer Veggies We LOVE July 13, 2016
We’ve all heard them – vegetable haters are everywhere. But here at HelloFresh, we’re convinced that people who don’t love veggies just haven’t tried the sensationally ripe, seasonal summer varieties in our boxes.
Just like Jamie, we know you can’t go wrong with delicious seasonal produce at dinner. That’s why we’re inspiring you to whip up your best summer veggies, snap a photo, and upload it to HelloFresh’s Facebook page with the dish’s name and the hashtag #HelloFreshChallenge. Did you know that beets contain tryptophan, which is the same feel-good chemical that everyone raves about in chocolate and protein-packed foods? Really ripe beetroot has a lovely sweetness to it, and although a lot of people are used to eating it pickled, the fresh stuff straight from the ground is even higher in folic acid, potassium, and manganese. Remove the skin, slice off the ends, chop into cubes, and boil under tender. Add it to salads or even roast it with some vegetable oil for a sweeter flavor.

You’ll probably be completely blown away by the fact that one portion of peas contains the same amount of vitamin C as two apples (we’re totally serious… Google it)! These sweet little gems are full of fiber, too. Throw ’em into curries, salads, pastas, and even risottos for a welcome pop of color.
