If you’re anything like us, the onset of October had you sprinting like it was mile 26 of the marathon to the grocery store, market, or nearby farm to stock up on apples. And in the heat of the moment, it seemed like a good idea. But now, you’re stuck with hoards of the autumnal fruit. Like WAY more than the average human could ever possibly consume. And it’s so daunting that you just sit there, staring at them all, wondering what in the world you’re going to do before they spoil. Of course, you could boil them down into applesauce or get a massive head start on Thanksgiving baking. But today, we’ve come equipped with seven recipes to convince you that maybe, just maybe, savory is the way to go.
So snap out of your apple rut, clear the counter, and get cooking!
When farro and black beans join forces, the result is a protein-packed force to be reckoned with. Our chefs round out this deliciously simple meatless dinner with a crisp Granny Smith apple, creamy avocado, and crunchy radishes.
Turkey burgers all too often turn out dry, but we’ve discovered the secret to keep them moist: apples! The grated fruit is blended into the meat along with breadcrumbs, herbs, and garlic. Together, the ingredients do an astonishing job of giving you everything you want in a patty. To continue the fruit-forward fall theme, we also added a side salad with cranberries, walnuts, and a lemon dressing. Get the recipe here.
Agnolotti (aka ravioli’s cuter cousin) hails from the Piedmont region of Italy. These delicious pockets are filled with a mixture of ricotta, Romano cheese, and butternut squash. They’re tossed with tart apple slices, earthy sage, and a touch of spinach. Get the recipe here.
This salad has autumn written all over it thanks to the combination of Honeycrisp applees, crunchy walnuts, and tart cranberries. Protein-packed quinoa adds some bulk, and a sweet sherry honey vinaigrette brings it all together. Get the recipe here.
Sage is a Mediterranean herb with narrow, gray-green leaves and a slightly bitter taste reminiscent of mint. Although commonly used in poultry dishes, it pairs beautifully with crunchy Granny Smith apple slices, creamy butternut squash, and caramelized onions. Get the recipe here.
There’s just something about the family-friendly, sweet-and-savory combination of pork and apples that keeps us coming back again and again. In this recipe, homemade applesauce pairs with juicy seared pork tenderloin and a side of roasted green beans for a meal that’ll make everyone smile. Get the recipe here.
Don’t settle for another boring night of brown rice. Instead, bulk things up with freekeh. This whole grain is all the rage this fall, and we have a feeling its nutty bite, fire-roasted smokiness, and high fiber content may have something to do with that. Tossed with roasted butternut squash, a Fuji apple, and butternut squash, this dish screams fall. Get the recipe here.
I know we swore by savory recipes, but why stop at dinner? Ride that culinary high all the way through dessert with this heavenly apple crumble.
