If you’re anything like us, the onset of October had you sprinting like it was mile 26 of the marathon to the grocery store, market, or nearby farm to stock up on apples. And in the heat of the moment, it seemed like a good idea. But now, you’re stuck with hoards of the autumnal fruit. Like WAY more than the average human could ever possibly consume. And it’s so daunting that you just sit there, staring at them all, wondering what in the world you’re going to do before they spoil. Of course, you could boil them down into applesauce or get a massive head start on Thanksgiving baking. But today, we’ve come equipped with seven recipes to convince you that maybe, just maybe, savory is the way to go.
So snap out of your apple rut, clear the counter, and get cooking!
1. Black Bean and Farro Salad with Apple, Avocado, and Radish
When farro and black beans join forces, the result is a protein-packed force to be reckoned with. Our chefs round out this deliciously simple meatless dinner with a crisp Granny Smith apple, creamy avocado, and crunchy radishes.
2. Apple Sage Turkey Burgers with Garlic Mayo and Cranberry Walnut Salad
Turkey burgers all too often turn out dry, but we’ve discovered the secret to keep them moist: apples! The grated fruit is blended into the meat along with breadcrumbs, herbs, and garlic. Together, the ingredients do an astonishing job of giving you everything you want in a patty. 3. Butternut Squash Agnolotti with Apples, Spinach, and Sage Brown Butter Sauce
Agnolotti (aka ravioli’s cuter cousin) hails from the Piedmont region of Italy. These delicious pockets are filled with a mixture of ricotta, Romano cheese, and butternut squash. They’re tossed with tart apple slices, earthy sage, and a touch of spinach. Get the recipe here.

4. Tri-Color Quinoa Salad with Apple, Eggplant, and Honey Vinaigrette
