Our Easy (and Healthy!) Gluten-Free Chia Breakfast September 19, 2015

If you haven’t heard about chia seeds yet, we don’t know where you’ve been!?  It seems that they are on menus everywhere, and we can’t walk through the store without passing some kind of chia-based snack.  So, we got curious, and decided to experiment in the kitchen with this mysterious ingredient.

It turns out that these seeds pack a punch when it comes to health benefits, including containing omega-3’s, tons of fiber and a bucket-load of calcium; no wonder they’re so popular! We decided to find a way to incorporate them into a dessert, so go ahead and grab seconds! 🙂

Try whipping up this scrumptious easy, healthy and delicious recipe next time you need to satisfy your sweet tooth, but don’t want to ruin your health goals!

Ingredients

  • 8 grams chia seeds
  • 1 cup coconut milk
  • 1/2 teaspoon honey
  • kiwi, sliced almonds, or anything else you have in your fruit bowl or pantry!

Instructions

  1. In a bowl, stir together the chia seeds, coconut milk and honey. When all the ingredients are fully combined, pour into a small glass and chill in the refrigerator for at least 1 hour. You’ll know you’re done when the chia seeds start to puff and expand.
  2. Take your set cups out of the fridge and add your garnish.
  3. Serve and enjoy!
