Elote Corn 4 Ways August 9, 2019

If you’re in the market for an easy, summer side dish, look no further than these four street corn recipes.

Elote Corn

1. Classic Mexican Elote Corn

We don’t mean to sound corn-y, but this classic Mexican street-style recipe is simply irresistible. Once you try it, we can promise there’s no going back to regular corn.

Mexican Elote Corn

Ingredients

  • 4 Ears of Corn
  • ¼ Cup Mayonnaise
  • ¼ Cup Sour Cream or Mexican Crema
  • 1/2 Cup Crumbled Cotija Cheese
  • 1 tsp Chili Powder
  • ¼ Cup Cilantro, roughly chopped
  • 1 Lime, quartered

 

Instructions

  1. Heat a grill or grill pan over high heat. Peel back and tie corn husks with butcher’s twine. When grill is hot, add corn and cook, turning occasionally, until cooked through and charred on all sides, about 8 minutes.
  2. Meanwhile, combine mayonnaise, crema or sour cream, ¼ cup cotija cheese, and ½ tsp chili powder in a large bowl.
  3. Once corn is cooked, add it to the bowl with the crema and turn to coat. Sprinkle with remaining cotija, more chili powder, to taste, and chopped cilantro. Squeeze lime wedges over, and serve.

 

2. Pizza Elote Corn

Elote meet pizza. Pizza meet elote.

Pizza Elote Corn

Ingredients

  • 4 Ears of Corn
  • ½ Cup Marinara Sauce
  • 2 TBSP Butter
  • 2 tsp Chopped Fresh Oregano
  • ¼ tsp Garlic Powder
  • ¼ Cup Grated Parmesan
  • Pinch of Chili Flakes, to taste

 

Instructions

  1. Heat a grill or grill pan over high heat. Peel back and tie corn husks with butcher’s twine. When grill is hot, add corn and cook, turning occasionally, until cooked through and charred on all sides, about 8 minutes.
  2. Meanwhile, place 2 TBSP butter in a small, microwave-safe bowl. Microwave on high until softened, but not melted, about 10 seconds. Stir in 1 tsp chopped oregano, garlic powder, salt, and pepper. Rub herb butter over corn.
  3. Spread Marinara over corn and sprinkle with grated parmesan, remaining oregano, and chili flakes, to taste.

 

3. Cajun Elote Corn

The sweetness of the corn paired with the spiciness of the seasoning makes for a delicious addition to any BBQ.

Cajun Elote Corn

Ingredients

  • 4 Ears of Corn
  • 2 TBSP Butter
  • 1 tsp Old Bay Seasoning
  • ½ tsp Celery Salt
  • ¼ Cup Roughly Chopped Italian Parsley
  • Tabasco, to taste
  • 1 Lemon, quartered

 

Instructions

  1. Heat a grill or grill pan over high heat. Peel back and tie corn husks with butcher’s twine. When grill is hot, add corn and cook, turning occasionally, until cooked through and charred on all sides, about 8 minutes.
  2. Meanwhile, place 2 TBSP butter in a small, microwave-safe bowl. Microwave on high until just softened, but not melted, about 10 seconds. Stir in Old Bay seasoning and celery salt. Rub Old Bay butter over corn.
  3. Top corn with a few dashes of Tabasco, to taste, and sprinkle with parsley.

 

4. Sesame-Hoisin Elote Corn

Sticky, spicy, and sweet. Turn up the flavor with this Asian-inspired recipe.

Sesame Hoisin Elote Corn

Ingredients

  • 4 Ears of Corn
  • ¼ Cup Hoisin
  • 1 Lime, zested and quartered
  • ¼ Cup Cilantro, roughly chopped
  • ¼ Cup Thai Basil, roughly chopped
  • 1 TBSP Toasted Sesame Seeds
  • Sriracha, to taste

 

Instructions

  1. Heat a grill or grill pan over high heat. Peel back and tie corn husks with butcher’s twine. When grill is hot, add corn and cook, turning occasionally, until cooked through and charred on all sides, about 8 minutes.
  2. Brush corn with hoisin and sprinkle with herbs, lime zest, and sesame seeds. Squeeze lime juice over and drizzle with Sriracha, to taste.
