7 Ways to Transform Leftovers Into Homemade Popsicles June 30, 2017
Your favorite warm weather treat just got a major homemade upgrade courtesy of some staple ingredients we have a feeling are hiding in your fridge or pantry right now.
There’s nothing quite like the taste of fresh-from-the-freezer popsicles on a scorching hot afternoon. But instead of reaching for the store-bought kinds, try your hand at the homemade ones this summer. They’re the perfect make-ahead dessert for summer barbecues and come together with the help of citrus, stone fruits, berries, herbs, yogurt — pretty much anything you have lying around.
Ready, set, grab a popsicle mold, and GO!
1. Lemon Ginger Chamomile Popsicles
We kept the same throat-soothing ingredients from your favorite cold-weather beverage and gave it a summer makeover.
Ingredients:
- 3 1/2 Cups Water
- 1 Tablespoon Ground Ginger
- 2 Tablespoons Honey
- 3 Chamomile Tea Bags
- 1/3 Cup Lemon Juice + Handful Lemon Slices
Instructions:
- Combine water and ginger in a small saucepan over medium heat. (This All-Clad, stainless steel version from our KITCHENWARE collection would work like a dream.) Bring to a simmer.
- Add honey and continue cooking until dissolved, 2-3 minutes. Remove from heat.
- Add chamomile tea bags and let steep 10 minutes.
- Once mixture reaches room temperature, stir in lemon juice.
- Place thin lemon slices into popsicle molds before pouring over mixture.
- Freeze about 4 hours before serving, preferably overnight.
2. Coconut Lime Popsicles
Put the lime in the coconut and mix blend it all up. Now close your eyes and picture yourself on a tropical island.
Ingredients:
- 3 Cups Coconut Milk
- Juice from 2.5 Limes
- 1/2 Cup Honey
- Handful Ice
Instructions:
- Combine all ingredients in a blender. Blend until well combined.
- Divide between popsicle molds and freeze about 4 hours before serving, preferably overnight.
3. Citrus Herb Popsicles
Don’t let those herbs go to waste! We made this frozen beauty with basil, but feel free to toss in mint if you have that on hand.
Ingredients:
- 1 1/2 Cups Orange Juice
- 2 Tablespoons Lime Juice
- 2 Tablespoons Lemon Juice
- 2 Tablespoons Honey
- 1 Cup Ice
- Handful Fresh Basil
Instructions:
- Combine all ingredients in a blender, but reserve a few herb leaves to add in whole. Blend until well combined.
- Place reserved herbs into popsicle molds before pouring over mixture.
- Freeze about 4 hours before serving, preferably overnight.

4. Strawberry Peach Popsicles
Peachy, sweet, vibrant, creamy… did we miss anything?
Ingredients:
- 3-4 Ripe Peaches, pitted and sliced
- 1/2 Cup Strawberries
- 3/4 Cup Greek Yogurt
- 2 Tablespoons Honey
- Milk or Water, if necessary to thin mixture
Instructions:
- Combine all ingredients in a blender and blend until well combined. It should be thick like yogurt, but still pourable (so not like ice cream). Add a splash of water or milk if too thick.
- Divide between popsicle molds and freeze about 4 hours before serving, preferably overnight.
5. Cucumber Watermelon Popsicles
If this popsicle could talk, it would scream summer thanks to the hydrating combo of watermelon and cucumber. If you have extra mint on hand, feel free to toss that in the mold before pouring.
Ingredients:
- 1 Small Watermelon (about 1 pound), peeled and chopped into small cubes
- 2 Tablespoons Honey
- 3 Teaspoons Lime Juice
- 1/2 Cucumber, peeled and thinly sliced
Instructions:
- Combine watermelon, honey, and lime juice in a blender and blend until smooth.
- Place cucumber slices into popsicle molds before pouring over mixture.
- Freeze about 4 hours before serving, preferably overnight.

6. Sangria Popsicles
Sorry kiddos. This one is for the adults. Simply combine all the citrus fruits chilling out in your fridge with red wine (bonus points if it’s a bottle from the HelloFresh Wine Club) and a touch of simple syrup. And voilà… a refreshing, frozen sangria dessert.
Ingredients:
- 1/4 Cup Granulated Sugar
- 1/4 Cup Water
- 3 Tablespoons Lime Juice
- 1 1/4 Cups Red Wine
- 1 1/4 Cups Orange Juice
- Orange and Lime Slices
Instructions:
- Make the simple syrup by combining sugar and water in a small pot over medium-high heat. Bring to a boil, then reduce to a simmer until sugar dissolves. Remove from heat and stir in lime juice. Set aside.
- In a tall pitcher or measuring cup, combine wine, orange juice, and simple syrup. Divide between popsicle molds and toss in a few thinly sliced orange and/or lime slices, if desired.
- Freeze about 4 hours before serving, preferably overnight.
7. Creamy Rhubarb Popsicles
The unsung hero of the fruit world gets its time in the spotlight when combined with a touch of sugar and some creamy Greek yogurt. Can’t find rhubarb? Feel free to swap it out for nectarines, blueberries, or mango.
Ingredients:
- 3 Stalks Rhubarb, cut into 1-inch pieces
- 1/4 Cup Sugar
- 3 Tablespoons Water
- 1 1/4 Cups Vanilla Greek Yogurt
Instructions:
- Combine rhubarb, sugar, and water into saucepan over medium heat. Cook, stirring, until mixture comes to a boil. Reduce to a simmer and cook until rhubarb is soft, 20-25 minutes. If too thick, add a splash of water.
- Add rhubarb mixture to blender and blend until smooth. Set aside to let cool.
- In a medium bowl, combine cooled rhubarb mixture with Greek yogurt.
- Freeze about 4 hours before serving, preferably overnight.
