In a Pickle January 15, 2016
The term “being in a pickle” gives pickles a bad wrap! Pickles are a superfood and we need to appreciate their bitter goodness. They are a great way to make sure that leftover veggies don’t get wasted, and also a flavor twist to add to any dish!
Now, here’s my confession- I just LOVE putting stuff in jars. I like to be crafty even outside the kitchen, and jars are such a fun, blank canvas to expand upon. They also make amazing gifts! So, while you might not think of giving your mom a pickle for her birthday, you might reconsider a gift set of beautifully decorated jars with brightly colored, homemade pickled veggies inside.

The sharp flavor adds variety and even makes an awesome quick, healthy snack! Collect your favorite ingredients and enjoy them in a new way. In a Pickle
- 1 quart cider or white wine vinegar
- 1 quart water
- 2 tablespoons sea salt
- 2 cups extra-virgin olive oil
- 5 cloves garlic, peeled and sliced
- Fresh black pepper cloves
- Chopped fresh thyme
- Chop your veggies in the way you like them
- Add everything into a jar
- Leave in fridge for a week or two at least, and enjoy!
