In my experience, we Mexicans start eating lunch between 1 and 3 pm.
The recipe for chilaquiles listed in here is very fancy and unusual for everyday breakfast. Most of the time, we eat chilaquiles “verdes” or “rojos” (green or red) that are made with regular tomato or husk tomato (or tomatillo) that are very easy to cook, some cream, boiled chicken breast or a scrambled/fried egg and in some places, a piece of bread (bolillo o telera). You can find very easily Red or Green chilaquiles on the streets of Mexico City in the morning.

Chilaquiles de mole are more sophisticated and are more common as lunch or dinner or when having a hangover.

Hi, I am your customer. My son really loves the chicken mummy roast with the cranberry sage stuffing. He is allergic to dairy, so he can’t eat the normal stuffing. When I cooked this meal, he really loved the stuffing. I want to cook it for him this Thanksgiving, but I don’t know how to prepare the fall harvest spice blend. Could you show me how to mix the spice or where I can purchase it? Thank you!
