Hello, love all these ideas but especially the chips! I am not a fan of beets since childhood (my Mother served them pickled, ick!) but am willing to try again. So for the chips, are they raw when you put them on the cookie sheet? Or do you boil/roast them first as you described? Please advise, I’m buying some beets today!! Thanks!

Hi Ilene – when you’re making chips, the beets should be raw! Then they’ll get nice and crisp in the oven 🙂
