The Best Guacamole I’ve Ever Had (+3 spins on the classic) September 16, 2020

Get your tortilla chips ready, friends. You’re gonna want a LOT of ’em.

I’ve eaten a whole lot of guac in my day, but nothing compares to this classic, fool-proof, creamy, tangy, and hot but not too hot recipe. It’s been a staple in my appetizer rotation ever since the day I tasted it, and have a feeling you’re going to love it just as much as I do.

Although clearly partial to this tried-and-true recipe, I’ve also included three creative spins on the beloved dip — one with fragrant basil and juicy roasted tomatoes, another with bacon (yes, bacon), and a third with creamy, gut-lovin’ Greek yogurt. Do your taste buds a favor and try ’em all this season.

1. Classic Guac

So simple, so fun to make, and SO delicious.

Ingredients:

  • 3 Ripe Hass Avocados
  • Juice From 1-2 Limes
  • 1-2 Green Chile Peppers, finely chopped
  • 1/2 Finely Chopped Red Onion
  • Handful Cilantro, chopped
  • Salt and Pepper

Instructions:

  1. Halve and pit avocados, then scoop out flesh into a bowl. Roughly mash with a fork or potato masher, adding half the lime juice as you go.
  2. Add remainder of lime juice, chile peppers, red onion, and cilantro.
  3. Stir well and season to taste with salt and pepper.

2. Basil Guac

Mexican dip + Italian flair = cross-cultural dream-come-true.

Ingredients:

  • 2 Cups Cherry Tomatoes, halved
  • 1 Teaspoon Olive Oil
  • Salt and Pepper
  • 4 Ripe Hass Avocados
  • 1/4 Cup Finely Chopped Red Onion
  • 1 Garlic Clove, minced
  • Juice From 1 Lemon
  • 1/2 Cup Finely Chopped Basil

Instructions:

  1. Preheat oven to 400ºF.
  2. Toss halved tomatoes with olive oil and a pinch of salt and pepper.
  3. Place tomatoes in a single layer on a lined baking sheet. Roast until soft, 12-15 minutes.
  4. Remove and set aside to let cool.
  5. Meanwhile, halve and pit avocados, then scoop out flesh into a bowl. Add red onion, garlic, and lemon juice.
  6. Use a fork or potato masher to gently mash ingredients together.
  7. Add basil and 3/4 of the roasted tomatoes. Gently fold together.
  8. Season to taste with salt and pepper, and top with remaining roasted tomatoes before serving.

3. Bacon Guac

You can’t buy happiness, but you can buy bacon. And let’s be honest, it’s practically the same thing.

Ingredients:

  • 4 Ripe Hass Avocados
  • Juice From 1 Lime
  • 1 Garlic Clove, minced
  • Salt and Pepper
  • 1/4 Teaspoon Crushed Red Pepper
  • 1/4 Cup Crumbled Feta Cheese
  • 6 Slices Cooked Bacon, crumbled
  • 3 Scallions, sliced
  • 1/2 Roma Tomato, diced

Instructions:

  1. Halve and pit avocados, then scoop out flesh into a bowl and mash with a fork or potato masher.
  2. Add lime juice and garlic. Season to taste with salt, pepper, and crushed red pepper.
  3. Stir in feta cheese, bacon crumbles, scallions, and tomatoes.

4. Creamy Guac

Thought guac was creamy before? Just wait. When avocados and Greek yogurt join forces, the result is an ultra creamy, double dip-worthy result.

Ingredients:

  • 1 Ripe Hass Avocado
  • 1/4 Cup Greek Yogurt
  • 1/4 Cup Diced Red Onion
  • 1 Tablespoon Chopped Cilantro
  • 1/4 Cup Diced Tomatoes
  • 1/2 Teaspoon Minced Jalapeño
  • 1 Teaspoon Lime Juice
  • Salt and Pepper

Instructions:

  1. Halve and pit avocados, then scoop out flesh into a bowl and mash with a fork or potato masher.
  2. Add remaining ingredients, and season to taste with salt and pepper.
